Based on the pinouts in below document (credit to OE9MKV) we can make audio and data modes and optional programming cable for this Kenwood.

Audio Cable
RJ45 pin 2 → 3.5mm TRRS tip (RIG_AFOUT)
RJ45 pin 3 → 3.5mm TRRS ring 1 (RIG_AFIN)
RJ45 pins 4,6 → 3.5mm TRRS sleeve (GND)
RJ45 pins 5 → 3.5mm TRRS ring 2 (RIG_PTT)

Serial Cable

MiniDin6 pin 2 (GND) → 3.5mm TRRS sleeve (GND)
MiniDin6 pin 3 (TM-V7 RX) → 3.5mm TRRS tip (RIG_RXD)
MiniDin6 pin 4 (TM-V7 RX) → MiniDin6 pin 5 (TM-V7 RX)
MiniDin6 pin 6 (TM-V7 RX) → 3.5mm TRRS tip (RIG_TXD)

Note that the DIN port can be used either as a serial or as a standard packet data port with support for packet at 9600bps. I don’t think you’ll be able to do better than 1200bps using the mic port.
