I am considering venturing into FT8. Noobie here.
Will Digirig plus iFTx give me FT8 running through a iPad to a Yaesu FT891?
Just looking for something simple / portable

Yes, I recommend DR-891 for this use case, but if you plan to only use your radio with the tablet then Digirig Lite will do.
It may be better to ease into the new areas of the hobby by starting with tools that set you up for success. For example, get comfortable with FT8 on a big screen before tackling mobile operations, try higher-power (QRO) before low-power (QRP), go with Windows before diving into Linux.
