Can you run FT8 on a FM HT such as my Yaesu FT-65? If so how would you set up the WSTJ-x program for my FT-65R?

Yes, in theory, but FM is not well suited for the weak signal modes.
If multiple stations try to transmit on the same voice channel they are going to step all over each other instead of nicely mixing together as in AM/SSB.

You should be perfectly fine running JS8Call (essentially a conversational FT8) session on FM between two buddies in the woods.

If you want to give it a try with your FT-65R, set rig to “none” and PTT to RTS over Digirig’s COM port.
